The science of food takes centre stage at festival

The effects foods can have on the body will be explored in an entertaining evening hosted by two University of York scientists.

Professors David Howard and Paul Walton will discuss the links between diet and wellbeing but will also demonstrate the less well-known consequences of eating chocolate on the voice and explain what ultra violet light does to a gin and tonic.

The audience will play an important part in the evening by volunteering to help Paul and David with their practical demonstrations and taking the chance to ask questions of their own.

Food and the Senses, at the Guildhall on Wednesday 23 September, is part of the York Festival of Food and Drink.

The event will be split into two sessions separated by a buffet meal with the early evening devoted to food, chemistry and the body and the second half concentrating on the effects of alcohol on the voice.

Professor Walton is the Head of the Department of Chemistry at the University of York and is a specialist in inorganic chemistry. His work includes research into the use of metal complexes to image and treat cancers.  The research interests of Professor Howard, from the Department of Electronics, include the analysis and synthesis of singing, speech and music. His work has been featured in the BBC Television programmes Voice and Castrato.
