“Thermodynamics teapot”

Dr Seishi Shimizu’s recent paper applying a theoretical physical chemistry approach to the caffeine-caffeine interactions in the presence of sugars and salts has been featured on the front cover of the RSC journal, Food & Function.

The “thermodynamics teapot” featured on the cover was created by Shimizu supervisee Frankie North (Biochemistry BSc, 2015), and it features the equations from papers authored by Seishi.  The paper, Caffeine dimerization: effects of sugar, salts and water structure, was also highlighted as a “HOT Article” in the Food & Function blog.
