André Carlo Colonese is a postdoctoral research associate at the Department of Archaeology of the University of York (UK).

“My research involves analysing animal bones and using chemical processes to reconstruct past diets and environments. As part of a large interdisciplinary project, I am now investigating the economic importance and culinary significance of poultry to past societies in NW Europe.

I am interested in researching the dramatic cultural transformation of poultry from its early use as food, to its intensive exploitation in modern European societies, using biomolecular and isotopic analysis of archaeological and modern chickens.”
